I LOVE smoothies.  A lot.  I have been having a smoothie a day for years now and have to say that they leave me feeling healthy, energetic and ready to face my day.  The key that I have found to an amazing smoothie that will take your shine to a whole other level, is Superfoods.  Goji, Cacao, Hemp, Chia are some of my fav’s that make it in to each cup of goodness.

So what do smoothies have to do with oats?  Well, when winter came this year I decided that I wanted to have something that was more ‘warming’ in the morning. I am a lover of hot weather, so drinking my smoothie always left me chilled! (but, I didn’t want to give up my superfoods!)

I also remembered that the humble oat is quite the superfood in it’s own right!  It contains a fibre called beta glucan, a soluble fibre that can decrease the levels of saturated fats in the blood and may reduce the risk of heart disease. It is also a “smart carb” taking a longer time to digest and absorb which keeps you feeling full and satisfied for a longer period.

Val & I decided to create a bowl of hearty oats, and add in all of the usual suspects.  The results are amazing!! These oats are absolutely delicious! They leave your tummy nice and warm and they are packed with all of the nutrition and medicine of Superfoods.  We played around with 2 variations, both delish in their own way.  Give them a try, and let us know what you think!

 

SoulShine Oat Bowl

 1 serving

What you will need:

·      1/3C rolled oats

·      1C water

·      1TBSP coconut butter or oil

·      1 TSP chia

·      1TSP ground flax

·      1TSP cinnamon

·      ½” fresh ginger, peeled and grated

·      1 small apple, grated

 TOPINGS:

·      1TSP goji berries

·      1TSP cacao nibs

·      1TSP hemp hearts

·      1TPS cashew butter (or almond or peanut)

·      maple syrup or honey to taste

*optional: small handful of chopped raw walnuts and pecans or a mix of berries, or both!(treat yourself!)

Method:

1.    Place oats, water, ginger, chia, apple in a small saucepan, and bring to boil

2.    Add in coconut butter and turn heat to low and simmer for 7-10 minutes, or until water is nicely absorbed

3.    Once cooked, place in your favourite bowl, and put the remaining ingredients on top

4.    Drizzle with Maple Syrup or Honey and sit with a cup of tea and enjoy :)

 

Golden Oat Bowl

This version takes inspiration from the Indian medicinal and completely delicious warm beverage:  “Golden Milk”.

What you will need

1 serving :

·      1/3C rolled oats

·      1C water

·      1TBSP coconut oil or butter(much creamier!)

·      ½ TSP turmeric(fresh or powder)

·      ½ TSP ginger(fresh or powder)

·      1TSP cinnamon

·      pinch of black pepper

·      pinch of cardamom

 TOPINGS:

·      maple syrup or honey to taste

·      drizzle of full fat coconut milk

·      1TSP cacao nibs

·      ¼ C coconut flakes

·      optional: 1TSP raw cacao powder

Method:

1.    Place oats, water, turmeric, ginger, cinnamon, black pepper and cardamom(if using) in a small saucepan, and bring to boil

2.    Add in coconut butter and turn heat to low and simmer for 7-10 minutes, or until water is nicely absorbed

3.    Once cooked, place in your favourite bowl, and put the remaining ingredients on top!
